L\u2019un des poissons les plus chers et les plus d\u00e9licieux au monde."},"content":{"rendered":"\n<p>Le bar du Chili, connu internationalement sous le nom de Chilean seabass ou merlu noir, est l\u2019un des grands tr\u00e9sors de la mer australe, en raison de sa valeur \u00e9lev\u00e9e et du fait qu\u2019il conquiert les palais exigeants depuis des d\u00e9cennies.<\/p>\n\n<p>Provenant des eaux froides et profondes qui entourent le Chili et l\u2019Antarctique, ce poisson a gagn\u00e9 sa place dans la haute cuisine mondiale gr\u00e2ce \u00e0 sa chair blanche, ferme et \u00e9cailleuse, au <strong>go\u00fbt doux, beurr\u00e9 et d\u00e9licat<\/strong> qui fond dans la bouche.<\/p>\n\n<p>Ce qui est curieux, c\u2019est que, malgr\u00e9 son nom, il ne s\u2019agit pas r\u00e9ellement d\u2019un bar. Son nom scientifique est Dissostichus eleginoides et il appartient \u00e0 la famille des Nototheniidae. <\/p>\n\n<p>Pendant des ann\u00e9es, il a \u00e9t\u00e9 connu simplement sous le nom de merlu noir de Patagonie ou de l\u2019Antarctique, jusqu\u2019\u00e0 ce qu\u2019en 1977, un commer\u00e7ant am\u00e9ricain nomm\u00e9 Lee Lantz l\u2019ait d\u00e9couvert au Chili, l\u2019ait rebaptis\u00e9 Chilean seabass et ait r\u00e9ussi \u00e0 le positionner comme un produit exclusif dans les restaurants les plus prestigieux du monde. Le <strong>nouveau nom, beaucoup plus attrayant et exotique<\/strong>, a \u00e9t\u00e9 la cl\u00e9 qui a ouvert son chemin vers le succ\u00e8s mondial. <\/p>\n\n<p>Le bar du Chili se distingue non seulement par sa saveur, mais aussi par ses propri\u00e9t\u00e9s nutritionnelles. C\u2019est une source riche en prot\u00e9ines de haute qualit\u00e9, en vitamines B et D et en acides gras om\u00e9ga-3 qui sont b\u00e9n\u00e9fiques pour la sant\u00e9 c\u00e9r\u00e9brale, la peau et les os. En 2023, le prix d\u2019exportation du bar du Chili frais <strong>avoisinait environ 58,43 USD<\/strong> le kilo (donn\u00e9es du march\u00e9 international). <\/p>\n\n<p>Aujourd\u2019hui, les \u00c9tats-Unis sont le principal march\u00e9, important chaque ann\u00e9e des milliers de tonnes, ce qui repr\u00e9sente entre 15 % et 20 % des captures mondiales. Cependant, la surp\u00eache et la p\u00eache ill\u00e9gale ont suscit\u00e9 des inqui\u00e9tudes quant \u00e0 l\u2019esp\u00e8ce.
